You’ve probably seen two-ingredient bagel recipes (also known as weight-watcher bagels because of their inherently low-cal character) all over the internet. Mine are transformed to be gluten-free, and we make our own self-rising flour with the addition of just two small baking ingredients — baking powder and salt. For each cup of flour, add 1 1/2 tsp baking powder and about 1/3 tsp salt to make regular flour magically self-rising!
This gluten-free recipe is very easy and can be doubled for more bagel delights! I found the best success using Blends by Orly Tuscany flour blend (available online here) but I’ve also had good success with cup-for-cup gluten-free flour blends like Better Batter and Bob’s Red Mill.
The fat-free Greek yogurt in this recipe needs to be a thick, low-water-content variety in order for these to have the best texture. I like Fage or Stonyfield for this reason – make sure you get plain yogurt!

Gluten-Free 2-ish Ingredient Bagels
Ingredients
- 1 cup gluten-free flour blend Like Blends by Orly Tuscany blend or Better Batter Gluten Free Cup for Cup
- 1 1/2 tsp baking powder
- 1/3 tsp salt
- 1 cup 0% plain Greek yogurt Use a thick blend like Fage or Stonyfield
- 1 large egg plus 1/2 tsp water beaten for egg wash
- seasoning of your choice Such as sesame seeds, poppyseeds, asiago or parmesan cheese, salt, pepper, cinnamon-sugar.. use your imagination!
Instructions
- Preheat oven to 375 F
- Prepare a baking tray by lining it with parchment and lightly spraying with cooking oil
- Create your own self-rising gluten-free flour blend by adding 1 1/2 tsp baking powder and 1/3 tsp salt to each 1 cup of gluten-free flour, in a large bowl
- Mix in 1 cup fat-free plain Greek yogurt (straining out any liquid)
- Bring together the dough until it forms one smooth ball; you may need to adjust and add more flour (if too wet) or more yogurt (if too crumbly). Your brand of flour blend will determine this
- Lightly dust a work surface with flour and press out your dough several times
- Divide dough into four equal portions (or more if doubling recipe)
- Pat dough into disc and press your thumb and middle finger through the center to form a hole. Pull and shape bagel gently and then place on prepared tray
- Lightly brush egg wash over bagels and top with preferred seasoning
- Bake 30 minutes at 375, then increase oven temperature to 450 and bake 3-4 more minutes. Remove early if bagels are becoming too brown. You want a light golden top and sides on the exterior
- Remove, cool and enjoy! Store in airtight container in the fridge for up to a week or in the freezer for longer
Notes
- If you are using yogurt with a higher water content, strain out all the liquid you can and use more flour
- Blends by Orly Tuscany blend produced the lightest, airiest bagels, but required a higher yogurt ratio
- These bagels are also a great source of protein with 8 grams per bagel due to the greek yogurt
